Baked Potato Wedges                   Medium
Ingredients:
1/3 cup flour
1/2 cup grated Parmesan cheese
3 large baking potatoes
1/3 cup milk, put in a bowl

1. In a large ziplock bag, combine flour and Parmesan cheese.
2.  After washing the potatoes, cut each into 8 wedges.
3. Dip wedges into milk bowl and put a couple in the bag at a time. Shake it up to coat them all over.
4. Put wedges on a greased baking pan. Spray cooking spray on top of the wedges.
5. Bake at 400 degrees for 20 minutes.
6. Turn wedges and spray with cooking spray again. Bake 20-25 minutes longer or until tender and golden brown.


 

Baked Chips                              Medium

Ingredients:
2 medium sized potatoes
Herb seasoning, garlic salt, or seasoned salt

1. Preheat oven to 450 degrees.
2. Wash potatoes and slice thin.
3. Spray a cookie sheet with cooking spray. Lay the potatoes out in a single layer.
4. Sprinkle seasoning on top and spray with cooking spray.
5. Bake at 450 degrees until potatoes are brown. Serve right away.

 

 


Fried Brown Rice with Onions, Almonds, and Cumin Medium
From The Sugar Addict's Total Recovery Program, by Kathleen DesMaisons , Ph.D., New York: Ballantine Books
Ingredients: 1 serving, multiply if cooking for others
1 tablespoon butter
1/4 onion, chopped
Small amount slivered almonds
1 cup cooked brown basmati rice

1. Melt butter in a nonstick fry pan.
2. Add onion and nuts and cook until the onion is translucent and the nuts are browned.
3.  Add precooked (or leftover) rice and cumin, and cook until warmed through.

 


Cheesy Potatoes                            Easy
Ingredients:
2 packages of hash browns (the diced kind)
2 cans of Cheese soup
1 can of milk
1 cup of french fried onions

1. In a large bowl, mix up the hash browns and soup. If it's too dry, add more milk.
2.  Pour the mixture in a greased crock pot and sprinkle the french fried onions on top.
3. Cook on either low for 8 hours or high for 4 hours, or until cooked through.
 

 

Mama's Lovin' Fries from the Oven            Easy

Ingredients
2 tablespoons vegetable oil
4 large baking potatoes of your choice (can even be sweet potatoes)
salt and pepper

1. Peel potatoes and cut into "fries" or strips or chunks.
2. In a bowl toss potatoes in oil with salt and pepper to your liking. You can also add seasonings like garlic or all purpose seasoning for different kinds of french fries. 
3.  Bake 20 minutes at 450 degrees F. Flip and bake additional 20 minutes.
 

 

Cheesy Twice Baked Mashed Potatoes       Medium
Potato Ingredients:
4 cups mashed potatoes
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
salt and pepper, to taste

Topping Ingredients:
1/4 cup butter, melted
1/4 cup grated parmesan cheese
3 slices bacon, crumbled
1 cup dry bread crumbs

1. Mix together mashed potatoes, cheddar cheese, sour cream, salt, and pepper.
2. Spread the mixture into a greased baking dish.
3. Time to make the topping - Mix together melted butter, parmesan cheese, bacon, and bread crumbs. Spread this topping mixture evenly over potatoes in the baking dish. 
4. Bake for 30 minutes at 350 degrees F or until topping is golden brown.
