Snack recipes for the whole family:

Quesadillas                              Easy

Ingredients:
tortillas
sliced or shredded cheese
Anything else like: cooked taco meat, cooked chicken, onions, tomatoes, other cheese, cooked potatoes, peppers, etc.
1. Put ingredients on half the tortilla and fold the other side over. Put on a plate.
2. Microwave for about 1 minute.
3. After microwaving you can add sour cream, salsa, or guacamole. Let cool and eat.

 


Cinnamon Flour Tortillas                   Easy

Ingredients:
flour tortillas
butter
cinnamon
1. Warm the tortilla over skillet, then spread on butter and sprinkle cinnamon.
2. Roll up and enjoy!


 

Pigs in a Blanket                            Easy

Ingredients:
Refrigerator crescent rolls
Li'l Smokies
1. Separate the crescent rolls and cut each one in half longways to make 16 pieces.
2. Add smokies to the larger end and roll up.
3.  Place on a cookie sheet and bake according to the package directions.


 

Tortilla Dogs                               Easy
Ingredients:
1 ounce pasteurized cheese spread (like Velveeta)
1 flour tortilla
1 hotdog
1. Cut cheese into 1/4 inch strips.
2. Place the cheese and hotdog on the flour tortilla. Roll it up and hold it together with a toothpick.
3.  Microwave until the hotdog is hot and the cheese is melted.




Rollup Dee-Lites                           Easy

Ingredients:
flour tortillas, any size
jalepeno-flavored cream cheese, or other flavor (you can add spices like salt, garlic, cumin, or a little dry taco seasoning for flavor)
1.  Bring the cream cheese to room temperature and spread it over the tortillas, kinda thick, and roll up.
2. Slice into 1 inch "rounds" and place them on a tray to serve.

 

Pumpkin Muffins                          Medium
Ingredients:
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 beaten eggs
1 16 ounce can pumpkin
1 cup sugar
1/2 cup uncooked oatmeal
2/3 cup cooking oil
1.  Stir together flour, cinnamon, baking powder, baking soda, and salt.
2. In a separate bowl mix together eggs, pumpkin, sugar, oatmeal and oil. 
3.  Add the dry ingredients to the wet ingredients and beat well.
4. Put muffin liners in muffin tins. Scoop batter into muffin tins, about 3/4 full.
5.  Bake at 350 degrees for approximately 16-20 minutes, depending on what size muffin tins you use.

 

Applesauce Oatmeal Muffins            Medium

Ingredients:
1-1/2 cup oatmeal
1-1/4 cup flour
3/4 teaspoon cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup unsweetened applesauce
1/2 cup packed brown sugar
1/2 cup milk
2 tablespoon vegetable oil
1 egg
1. Preheat oven to 400 degrees. Line muffin pan with 12 muffin liners.
2. Combine dry ingredients.
3. Mix together applesauce, brown sugar, milk, oil, and egg. 
4. Add wet ingredients to dry ingredients and mix until just moist.
5.  Fill muffin cups almost to the top. Bake for about 20 minutes. Makes 12 muffins.

 

Cinammon Apple Snack Cake           Easy/Medium
Ingredients:
2/3 cup sugar
1 stick butter, softened
3 eggs
1/2 cup applesauce
28 squares (7 whole) cinnamon graham crackers, finely crushed
1/2 cup flour
powdered sugar
1. Mix together sugar, butter, applesauce and eggs.
2. Stir in graham crackers and flour until blended.
3.  Spread batter in an 8 x 8 baking pan. Bake cake at 350 degrees for 40-45 minutes, and firm to the touch.
4. Cool completely and sprinkle powdered sugar over the top. 

 

Smoked Salmon Cheese Ball            Medium
Ingredients:
smoked salmon, canned
8 ounce block of cream cheese
cheddar cheese, grated
chopped olives, canned
salsa
green onions, chopped
chopped nuts, optional
1. Mix everything together in a bowl, in whatever amounts you want. Start with the salmon and cream cheese, and then add the other ingredients as you desire. Either put it in a dish as a spread, or roll into a ball and roll in the chopped nuts. Serve with crackers.

 

Cranberry Crunch                      Easy

Ingredients:
1 cup uncooked quick oats
1/2 cup flour
3/4 cup brown sugar
1/2 cup butter, softened
15 oz. can cranberry sauce

1. Mix together the oats, flour, brown sugar, and butter.
2.  Put half the mixture in a greased 8 x 8 baking pan.
3. Spread the cranberry sauce over the mixture in the pan.
4.  Put the other half of the mixture on top. Bake at 350 degrees for 45 minutes.

 

No Bread Ham & Cheese Pinwheels       Easy
Ingredients:
1 (8 ounce) package cream cheese, softened
4 dill pickles, chopped
2 tablespoons prepared mustard
3 tablespoons chopped fresh chives
5 slices ham

1.  Combine cream cheese with pickles, mustard, and chives.
2. Spread mixture on ham slices and roll them up.
3.  Wrap each rolled up slice in foil. Put rolls into fridge and and chill overnight or for at least 2 hours. 
4. Unwrap and slice. Great in place of a sandwich at lunchtime.
 

 

Cheesy Carrot Balls                     Easy
Ingredients:
4 ounces cream cheese (1/2 bar)
2 ounces grated cheddar cheese
1 carrot, grated

1. In a medium mixing bowl combine all ingredients.
2.  With slightly wet hands roll into balls. You will get between 1 and 2 dozen balls depending on how big you make them.
These are fun and yummy for kid's lunches. They can be wrapped in plastic wrap and refrigerated up to 3 days.
 

 

Chunky Chicken Spread             Easy/Medium
Ingredients:
2 chicken breast halves, cooked and diced.
1/4 cup mayonnaise
1/2 cup frozen peas
1/2 cup grated carrots
1 tablespoon fresh chopped parsley
crackers, bagels, pita shells, etc.

1. Bake the chicken for 20 minutes at 350 degrees or just use leftover chicken. Cool and chop up.
2. Cook frozen peas according to package directions.
3.  Mix chicken with cooked peas, mayonnaise, grated carrot, and parsley. 
 

 

Banana Fritters                    Medium
Ingredients:
1/2 cup milk
2 bananas, mashed
1/2 teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon butter, softened
vegetable oil for frying
1/2 cup confectioners sugar

1. Mix together mashed bananas and milk. 
2. Sift in the baking powder and salt.
3. Blend in the eggs and butter. 
4. Heat oil in skillet. Carefully drop spoonfuls of batter into the hot oil.
5 . Like you were making a pancake, fry until edges set, flip, fry until golden brown. Transfer to a plate with paper towels to drain off excess oil. Sift a dusting of confectioner's sugar over fritters at serving time. 
 

 

Popcorn With Attitude                  Easy    
Ingredients:
¼ cup butter, melted
1 tablespoon dry taco seasoning mix
2 tablespoons vegetable oil
½ cup popping corn

1. Melt the butter and mix with the taco seasoning.
2. Pop the popcorn in a covered pot with the oil and put in a large bowl.
3. Pour the butter and seasoning over the popcorn and mix.

 

Spanish Triangles                    Medium
Ingredients:
Vegetable oil spray
2 flour tortillas
¼ cup Colby Jack cheese
2 slices bacon, cooked, drained, and crumbled
1 tablespoon chopped mild green chilies
sour cream, optional

1. Spray a pan with cooking spray and put 1 tortilla in it.
2. Sprinkle all the other ingredients, except sour cream, over the top of the tortilla and cover it with the other tortilla.
3. Cook on medium and flip carefully when the bottom of the tortilla is lightly brown.
4. Cook until the other side is lightly brown and remove onto a plate.
5. Cut the whole thing into wedges like a pizza. Serve with sour cream on the side for dipping.
