Kids and Fruit!

Very Berry Icee                           Easy

Ingredients:
2 cups frozen strawberries or raspberries
1 1/2 cups water
1/2 cup honey
2 tablespoons lemon juice
1. Partially thaw frozen berries by setting them out in a bowl until just a little icy. Do not drain.
2. Put berries, water, honey, and lemon juice into a blender.  Cover and blend on high until mixture is smooth.
3. Pour mixture into a loaf pan and cover with foil. Put the pan in the freezer for about 6 hours or until firm.
4. Remove the pan from the freezer about 15 minutes before serving. Use an ice cream scoop to scoop into bowls.


 

Peanut-banana-butter Crackers           Easy
Ingredients:
1 ripe squishy banana, peeled
1/4 cup peanut butter, creamy or chunky
soda crackers
1. Smash the banana in a bowl and stir in peanut butter.
2. Spread mixture on crackers and serve immediately so the banana
doesn't turn brown!

 

 


Frozen Fruit                              Easy    
Ingredients:
1 large can chunky fruit cocktail
Whipped topping
1. Freeze the can of fruit. 
2. After frozen, remove both ends of can and push the fruit out. Cut into 3 or 4 slices. Serve each slice with whipped topping on top.
 

 

Strawberry Stuff                           Medium
Ingredients:
3 cups strawberries, cut up
2 cups mini marshmallows
1/2 cup sugar
1 cup apples, diced
1/3 cup green grapes, cut in half
1/2 cup whip cream
1. Combine strawberries, marshmallows, and sugar. Cover and chill for at least 4 hours.
2.  Just before serving, add apples and grapes.
3. Gently stir in whipped cream.

 


Frozen Cranberry Banana Salad           Easy

Ingredients:
1 20 ounce can pineapple tidbits
5 medium firm bananas, halved lengthwise and sliced
1 16 ounce can cranberry sauce
1/2 cup sugar
1 carton frozen whipped topping, thawed
1.  Drain pineapple juice into medium bowl, set pineapple aside and add bananas to the juice.
2. In a large bowl, combine cranberry sauce and sugar. Add the bananas after discarding the juice.
3. Stir in pineapple and whipped topping.
4. Pour into 13 x 9 dish. Freeze until solid.

 

 


Bite Size Fruit Salad                      Easy

Ingredients:
3 Gala apples, cut bite size
2 Granny Smith apples, cut bite size
3 king size Snickers bars, cut bite size
1 small container of whipped topping
1. Mix the apple pieces and Snickers pieces with the whipped topping. Chill and serve.
 

 

Grape Salad Recipe                       Easy

Ingredients:
1 lb. grapes, 1/2 red and 1/2 green
1/4 cup brown sugar
3/4 cup pecans, chopped
Mix:
8 ounces cream cheese
8 ounces sour cream
1/2 cup sugar
1. Wash and dry the grapes.
2. Add grapes to cream cheese mixture and stir.

3. Put into bowl, cover with 1/4 cup brown sugar and 3/4 cup chopped pecans. Chill until ready to serve.


 

Fruit Burrito                          Easy/Medium
Ingredients
tortilla shells
creamy peanut butter
banana
strawberries
fresh peaches, pitted and sliced
vanilla yogurt

1. Slice up fruit to get ready to fill tortillas.
2.  Spread about 1 tablespoon of peanut butter onto each tortilla. 
3. Add sliced bananas, strawberries, and peaches to each tortilla.
4.  Drizzle a small amount of yogurt over the fruit. Fold sides over and roll up tortilla. Peanut butter will help hold in place. 
Vary the fruit by season, or add favorites to the mix for different tastes.

 

Strawberry Compote                   Easy
Ingredients:
1 large can mandarin oranges
2 pints strawberries
1/3 cup orange marmalade
2 squirts lemon juice

1. Drain the mandarin oranges and put in a bowl.
2. Slice off the tops of the strawberries and add to the bowl.
3. In a different bowl, add the marmalade and lemon juice and mix together.
4. Add the mixture to the bowl of fruit and stir. Refrigerate and serve chilled.

 

Apple Nachos with Peanut Butter Sauce    Medium/Hard
Ingredients:
1 apple (diced)
1 banana (halved and sliced)
2 whole pita breads
1/4 cup butter, melted (1/2 stick)
3 tablespoons sugar
1 teaspoon cinnamon

Sauce Ingredients:
1/2 cup of creamy peanut butter
1/4 cup of whole milk
1 tablespoon of honey

1. Cut the pitas in half so you have two half circles, then cut in half again, creating 4 triangle shapes from each.
2. Separate and pull bread apart at the edge where it's still attached. 
3. Brush pita chips with butter and sprinkle with sugar and cinnamon. Bake at 400 degrees F for 5 - 7 minutes. 
4. While baking, prepare sauce by melting together peanut butter, honey and milk in a small saucepan. 
5. Serve chips drizzled with sauce and add sliced apples and banana to the plate.
